Baked Cheese Tortellini Bites

Ingredients
  

  • Cheese Tortellini
  • Flour (All Purpose)
  • Eggs
  • Milk
  • Panko Bread Crumbs
  • Grated Parmesan Cheese
  • Dried Oregano
  • Red Pepper Flakes
  • Salt & Pepper
  • Marinara Sauce

Instructions
 

  • Preheat oven to 375° and line a large cookie sheet or baking tray with parchment paper. (Two pans make for easy rotation)
  • Boil cheese tortellini according to package instruction. Drain.
  • Set up an assembly line:
    • a plate with flour
    • a bowl with eggs and milk mixed together (2 eggs and 1/2 cup milk is a good start, you can always mix more if needed)
    • a plate with bread crumbs, parmesan, oregano, red pepper flakes, salt and pepper (How much of each is up to you, and depends on your tastes. A little red pepper flakes goes a long ways.)
  • Cover tortellini in flour, then place into egg/milk mixture and coat completely, finally, cover tortellini in herb/breadcrumb mixture.
  • Place on parchment paper lined baking sheet. Bake for 14-15 minutes.
  • Serve warm with marinara sauce for dipping.
