Here at Flying Pig Cattle Co., we sell both raw cow milk and raw goat milk—and we love them both. Kind of like your favorite pair of boots and your favorite tennis shoes. Different purposes, same love.
So if you’ve ever stood in front of our farm fridge wondering which milk is right for you, let’s break it down.

Taste Test: Tangy or Traditional?
Cow milk is what most folks grew up with—smooth, creamy, and mild. It’s the classic. Goat milk? It’s a little different. Some people describe it as slightly tangy, in a good way. But don’t let that scare you off—it’s that unique flavor that keeps people coming back for more.
We have two nieces – the older one prefers cow milk, while the younger one will choose goat milk every time. It truly depends on the person’s taste buds!
Fun fact: The taste of milk can vary depending on what the cows and goats are eating, so sometimes flavor varies with the seasons. How fresh the milk is and how it’s handled can also impact the taste. Ours is fresh and handled with care, so no surprises.
Digestion Debate
Goat milk is often easier to digest for folks who have a hard time with cow milk. It has smaller fat globules and less lactose, which means some people who struggle with cow milk can tolerate goat milk just fine (though it’s not lactose-free, so tread carefully if you’re super sensitive).
Cow milk has more of a certain protein (A1 casein) that can be harder for some people to digest. Goat milk has mostly A2 casein, which may be gentler on the gut. Research is still rolling in, but many of our customers swear by it.
Some cows only produce the A2 casein as well, these cows are referred to as A2/A2. Our cow, Daisy, is A2/A2, if you are interested in trying some of her milk too!
Science says: A study in the Journal of Dairy Science showed that goat milk may be better tolerated by people with cow milk sensitivities—but everyone’s body is different, so it’s worth trying both if you’re curious.

Nutritional Showdown
Both milks are nutritional powerhouses, but they’ve got their own strengths:
Goat Milk: Higher in calcium, magnesium, and vitamin A per cup. It’s also rich in medium-chain fatty acids, which are quickly absorbed for energy.
Cow Milk: Often has more vitamin B12 and folic acid. And if you’re trying to bulk up, cow milk has a bit more lactose and calories.
Raw versions of both—like what we sell—also retain enzymes and beneficial bacteria that you don’t necessarily get in store-bought, pasteurized options.
Creaminess & Capabilities in the Kitchen
Cow milk naturally separates, so you get that beautiful layer of cream on top—perfect for skimming off and making butter or whipped cream. Goat milk, on the other hand, is naturally homogenized. That means the cream stays mixed in, so it’s smooth and ready to drink straight from the jar.
